Monday Menu: Grilled Spatchcock Turkey

This is the only way I’ve been preparing turkey since my first attempt. The only thing I changed up from that first time I prepared it, I skip the metal rack and instead place the bird on a bed of carrots, celery and onion. With the shorter cooking time, the flavor needs the boost the roasting veggies add.

Sometimes I roast it in the oven, but if the weather is nice enough, I’ll roast it on the wood pellet grill.  I like the pellet grill because I can control the temperature as I would in the oven.

Work Wednesday: Moving Through

My brain is stuck. And stuck good. So, it was time for a bit of distraction. I finished up two pieces in the kitchen update. The formerly green pantry got a tuxedo look, while the one-hundred-year-old table has been stripped, oiled, waxed, and the base painted. I found a date of 1928 once I stripped it.

You can see the original green pantry in the table photos. The chairs are next. I’m thinking white with b&w gingham seats.

Monday Menu: Cranberry Season Has Arrived

Cranberries are on sale now, so it seemed a good time to re-up this recipe.  You can use sirloin steak, or ribeye or NY strip. Works well on chicken breasts, too.

My love of cranberries has been well documented here. So no wonder this is one of my favorite dinners. The potatoes are very creamy – you can make them more calorie friendly by reducing the amount of butter, you probably won’t miss it with the creamy dressing.
