Wildcard Weekend: A Couple of Quick Recipes

So you say you don’t have any eggs? This quick and moist cake doesn’t need any. All you need is a box cake mix, any flavor, and a complimentary can of soda. Mix, bake, and eat.

This one is a boxed yellow cake. I didn’t go with lemon because I didn’t want a fake lemon flavor. I added two tablespoons of dehydrated lemon crystals and one 12 oz can of lemon-lime soda. I think next time I would go with a lemon seltzer water.

Mix by hand until everything is incorporated and no lumps, but don’t overmix. That could cause the cake to lose carbonation.

Bake according to package directions. I suggest making either cupcakes or sheet cake – this cake is too dense and moist to make a good layer cake.

I drizzled this one with a lemon/powdered sugar/bit of butter glaze. I’m not a big fan of frosting, and the denseness of this cake calls for a light frosting touch.

For about two bucks, it turned out pretty tasty.
