I’ve been searching out some favorite baking recipes that do not include eggs. The first one was the soda pop lemon cake (recipe here). This one is a basic one pan/one bowl chocolate cake from King Arthur’s. It was perfection without any eggs. Find the original recipe here, along with some of their blog tips.
I made a couple of tweaks. I used Special Dark Cocoa – it’s all I ever have on hand – and it made for a super chocolaty flavor and reduced the sweetness enough that the frosting didn’t feel like overkill. I skipped the coffee additions.
For the frosting – I only had milk on hand, so I used that and 60% dark cacao chips I keep in the cupboard and it came out perfect. I started with 1 cup of chips to 2 tbsps of milk. Add more milk if needed. That made more than enough frosting for an 8×8 square pan.
I would definitely make this one again. It was rich, fluffy and not overly sweet.
