I’m having a low-key Thanksgiving this year. No traveling, no big event here. I’m heading over to friends. I’ll be taking Cranberry Sauce and Chocolate Chip Cookies.
Here’s another round of Thanksgiving recipes from 2021:

The local grocer had turkeys on clearance. They are all marked at $8 and I sorted through them until I found a smallish one at 13 lbs. So why not a turkey dinner in May?
I decided I wanted to spice things up, so I went with a Cajun spice rub that I had received in a gift box of spices. I spatchcocked the turkey and rubbed it with EVOO, then the spice rub. I put it on a bed of garlic and onions seasoned with a healthy dose of poultry seasoning (that I make myself: sage, garlic, thyme, rosemary, pepper and nutmeg) and grilled for about 90 minutes until the thighs were just over 170 degrees F. I wrapped in foil and let it rest.
For sides, I went with electric pressure cooker (instant pot, multi-pot) mashed potatoes with cajun gravy, and fresh cranberry sauce (I tossed in a diced apple that was close to being Bixby food).
Tonight I’ll be grilling burgers – keeping it simple. But here’s an adventurous way to grill them: Stuffed Jalapeno – Chedder Burgers
