Soup of the Week: Zuppa Toscana – Spicy Potato Soup

Revisiting from 2023:

I was under the weather all weekend and this soup seemed like the perfect remedy.

Spicy Potato Soup (Zuppa Toscana)

  • 1/4 cup butter
  • 1 yellow onion, diced
  • 2 celery stalks, chopped
  • 1/2 tsp salt
  • 1/4 tsp cayenne
  • ½ lb spicy ground sausage (or ground beef)
  • ¼ tsp crushed red pepper (opt)
  • 1 bay leaf (remove before serving)
  • 1 tsp crushed garlic
  • 32 oz chicken broth
  • 6 potatoes, well scrubbed, unpeeled – cubed or thinly sliced
  • 2 cups milk
  • salt and pepper to taste
  • 8 oz shredded cheddar or jack (opt – I like parmesan myself)

Trixie Belle At 9 Weeks

Making great progress in their relationship

8-week sweater (Scout hand-me-down)

She outgrew the other sweater in the first week – this one was Scout’s at 12-14 weeks, and was roomy on her. I think Trixie will be out of this one in a week to 10 days.  Since she only wears it on extremely cold days outside, I usually go to the thrift store and shop in the toddler section for puppy needs.

Santa hat was met with a lack of enthusiasm.

Regardless, she was adorable

The full story:

 

I was sitting on the exercise ball that I use for my office chair. I was participating in a chat about my newest novel, Underway, and Emma Kate came in and was meowing at me. I ignored her. At my peril.

She reached up and stuck a claw into my exercise ball, and that’s all they wrote. LOL

Can’t be mad at her, she’s 17 years old and wants what she wants and usually gets what she wants.

New ball will be here on Thursday.

Meanwhile, she retreated to the bedroom to sulk because I yelled at her.

In my defense, one does tend to squeal when one is falling on one’s ass.
