Monday Menu: Experimenting With Ingredients

Chicken breasts on a blue plate Someone gave me a jar of Guava Fruit Spread and I’ve been playing with ways to use it. I started with thumb print cookies. This weekend I decided to try it on grilled chicken breasts and with some experimentation, decided it paired well with citrus and chipotles in adobo sauce. I always have a jar on hand and try to find different ways to use it, too. Guava Chipotles Chicken Breast

  • 1 lb chicken breasts
  • Guava fruit spread
  • Chipotles in Adobo sauce
  • Lemon, lime and orange juice
  • Red pepper flakes
  • Red wine vinegar

Marinade: Mix together equal parts Orange, Lemon and Lime juice with 2 tablespoons guava fruit spread. Cover chicken breast and flip breasts half way through. Marinate chicken for one hour+  before grilling BBQ sauce: Mix together equal parts chipotles in adobo sauce and guava fruit spread Add splash of red wine vinegar and red pepper flakes to taste chicken breasts marinating in juice on counter top Grill chicken breast until about 150⁰ F, then coat top with BBQ sauce and continue to grill until internal temp is 165⁰ and BBQ sauce is carmelized. Serve with rice or baked potatoes, grilled peppers and onions, and salad
